Farmers and traders sell boatloads of pineapples, sweet potatoes, onions, watermelons and seasonal fruit to smaller buyers who carry the produce on to land markets. That trade sets the timetable, and it starts early so the produce reaches shops the same morning.

The market is smaller than it was. Official counts in 2025 put Cai Rang at a little over 200 boats a day, well down from the several hundred that crowded the river in the 1990s. With fewer boats, the early hours matter even more, because the late-morning scene is thinner than it once was.
